Make a slit in the casing of the boudin and peel the casing off, being careful to keep the rest of the boudin intact.
Cut the links into 1-inch pieces.
Make an egg wash by mixing the eggs and milk together (you can use water instead of milk).
Dredge the cut boudin in flour, followed by the egg wash then the bread crumbs. Make sure all sides of each boudin piece are coated.
Deep fry the boudin in vegetable oil at 350 degrees until golden brown.
