Make a cut in the boudin’s casing and peel the casing away from the rice mixture. Pour the loose boudin into a bowl and discard the casing.
Cut into the chicken breast at its thickest end to create a pocket inside the breast.
Season the chicken with your favorite seasonings.
Stuff the loose boudin and mozzarella cheese into the chicken.
Use a few toothpicks to close the pocket in the chicken breast.
Grill until fully cooked, making sure the internal temperature of both the chicken and the boudin reaches 170 degrees Fahrenheit.
