Slice the sausage, dice the onions and the bell pepper.
In a pot, cook the sausage until browned, then remove from the pot.
Cook the onion and the bell pepper until browned, then add the sausage back to the pot along with the ham (or cooked bacon) and the tomatoes. Simmer for 10 minutes.
Drain 1 can of black-eyed peas and then add all 3 cans of black-eyed peas and simmer for 15 minutes.
Stir in the cooked rice, turn the heat off, and let sit for 10 minutes. Season to taste.
